Ingredients

• 6 cups of water
• 6 lime leaves torn or zest of 1 lime
• 4 basil leaves torn
• 2 inches of ginger, peeled and roughly chopped
• A pinch of both salt and pepper
• 2 teaspoons of lemongrass paste
• 1 ½ pounds of skinless, boneless chicken breasts (thinly sliced)
• 1 can of regular coconut milk
• 4 cloves of garlic (roughly chopped)
• 4 shitake mushrooms (thinly sliced)
• 1 habanero (seeded and thinly sliced)
• ½ a red bell pepper (seeded and thinly sliced)
• ¼ cup of matchstick carrots
• 2 tea spoons of Thai curry paste (we used Maesri Prik Khing paste)
• 1 teaspoon of fish sauce (we used Red Boat fish sauce)
