1 lb Lean ground Turkey Breast, sauteed
6 slices Bacon, chopped
1 bag baby spinach
1 dozen large brown eggs
Kosher Salt
Black pepper


  1. Saute Bacon slices until fully cooked. Rough Chop and reserve
  2. Add Lean ground Turkey to pork fat from Bacon. Season with Salt and pepper
  3. Saute ground Turkey until fully cooked; Cool and reserve
  4. Saute baby spinach in Extra virgin olive oil. Cool and reserve
  5. Crack large brown eggs into mixing bowl. Add salt and pepper and whisk to combine
  6. Preheat oven to 350 F; Grease a muffin pan with butter
  7. Weigh 1.5 oz of ground Turkey. Place Turkey into individual muffin tin
  8. Place chopped bacon and spinach into individual muffin tin
  9. Fill muffin tins with egg mixture just below the top. Season with salt and pepper
  10. Bake at 350 F for 30 minutes or until eggs are firm.
